About Victoria Gin: Canada’s First Premium Gin
Hand made in small batches from a wood-fired still on Vancouver Island. Vic Gin balances the characteristic evergreen flavour of juniper with notes of citrus, floral, and spice. It’s distilled it in small batches in a gleaming wood-fired copper potstill. Only the middle part of each run, the “hearts”, is saved for bottling.  The result is an intensely flavored spirit that is as full-bodied and complex as a fine single-malt whisky.

Gin is a complex spirit, essentially a neutral vodka that is infused with herbs and spices, then re-distilled. Vic Gin uses ten natural and wild-gathered botanicals to create a powerful but elegant spirit.

1. Juniper Berries: The characteristic evergreen flavor of all gins. “Gin” comes from the Dutch word for juniper, “geneva.”

2. Coriander: A savory herb commonly used in fine cuisine; its flavor is warm, mild and sweet, with citrus undertones.

3. Angelica: Once used to protect against witches, it has a faint licorice-y flavor. As a tea it settles nerves and stomachs.

4. Orris Root: The root of a species of iris, orris has the heady scent of woodland flowers.

5. Lemon Peel: Adds a clean, refreshing note to the finish.

6. Orange Peel: A touch of fruit to balance the savory flavors in the mid-palate.

7. Star Anise: A powerful herb that is used sparingly to add a licorice note.

8. Cinnamon Bark: True cinnamon (as opposed to the more common Cassia) adds a delicate, sweet spice note to the gin.

9. Rose Petals: Add an floral note to the bouquet.
